Chef Sergio Herman invites you to try out some of his very interesting gourmet specialties: the tablet of frozen wasabi, sake and lime; snacks like pumpkin waffle with gorgonzola ice cream, sphere of foie gras and green apple. And for the dishes, crab on brioche with oyster emulsion (in nitro balls and jellied), caviar, avocado cream, citrus fruit, or oysters poached in water on chlorophyll with parmesan cream.
