Okonomiyaki, World War II
This bar-tavern in Hiroshima specializes in the typical dish of the city: okonomiyaki. It is a very interesting pizza with a base of noodles (udon), vegetables, meat, Japanese sauce, sprouts, soy and egg topping on the top. It is prepared by flipping it back and forth on a griddle; you can watch the cooks prepare it, which is in itself a spectacle. The location is priceless: it is very close to the Hiroshima Peace Memorial Park. The facade is of a typical Japanese tavern, with wood and lanterns at the entrance. Inside, there are fans, posters and the radio is on all the time. There is a low bar where you can share with strangers (it was packed when we went), but they also have their own individual tables in the middle where they prepare your dish.
