Old Mills
This is a tourist resort that is located in Santa Gertrudis, in Greece Canton, on a road that connects the canton with Poás. It is a place to try typical Costa Rican food, with pools, a large ballroom with Costa Rican details like the oxcart. The main attraction is the old mill building which squeezed sugar cane and by heating it in steel pans it became molasses which was used to make the "tapa de dulce". This is actually Raw sugar and was used to make fresh water or to sweeten coffee among other things. In addition this honey, when plunged into boiling water, makes a type of caramel which is added to other things like vanilla essence or nuts and after kneading it becomes a marshmallow or a "sobao".
