The chef Enrico Bartolini is only 27, and invites diners to taste his culinary creations. He combines flavours from all different cuisines. Worth noting: pickled tongue with mashed carrots with orange and a small loop of crispy goat cheese, as well as kid-filled agnolotti with tomato concasse hot oil and olive oil and parmesan foam, or the grissini bolliti, filled with succulence which gives them a juiciness of chicken, flavored with sage, among other delicacies.
