The tour was great

Founded in 1798, this distillery boasts that it makes the best single malt whisky in the world. It and the Scapa Distillery are the only two producers of whisky on Orkney. The method of preparation is certainly one of the most traditional that I've seen, with the "malting floor", a room in which wheat and spreads are manually turned by blades and the 15,000 liter capacity fermentation barrels are still made from wood (the majority of Scottish distilleries now use metal). Wood from the sherry region of Jerez de la Frontera in Spain and American oak are used for the barrels.

The tour was great, with the most attentive staff I've seen so far.

The most common whisky is 12 years old, but you can also buy 15, 16, 21 and 25 year old varieties, and for 500 to 3,200 GBP, you can try the vintages of 30 to 60 years. The whisky is a beautiful amber color. The flavor is soft at first with a smoky flavour at the end, and a hint of honey thanks to the sherry casks. It's pretty good for a 12 year old whisky. At the end of the tour is a double tasting, one of the 12 year old whisky and another of your choice (up to 18 years). Definitely worth it, a very interesting tour ... and maybe an invitation to sin!
