Cannon & Cannon is one of Great Britain’s leading purveyors of hand-crafted, locally-sourced British charcuterie. What is British charctuerie, you ask? Well, I had the same question as I approached their tasty-looking stand in London’s Borough Market. One of Cannon & Cannon’s vendors explained to me that charctuerie is by far a continental culinary invention, brought nearly to perfection by the French and, above all, the Spanish. However, in the face of a lack of autochthonous cured meats, Cannon & Cannon has gone about distributing and popularizing British versions of the continental favorites made with local ingredients by small-batch producers.
