El Guisante Verde Project
Wines in Matanegra
We spend the weekend at this establishment and it was a good choice as our base of operations for exploring southern Extremadura. Finishing up the day in the thermal pool right as the sun is setting, taking an aromatic shower, or trying the wine treatment is an experience that’ll make you forget hours of hard traveling. Although most would think that a thermal spa would be a place to enjoy a light diet, you just have to let the chef, Alberto, cook up some pork-knuckle dumpling in a Ribera del Guadiana red wine reduction or (owing to its proximity to Portugal), the delicious Monacal-style codfish.
The Iberian ham and game were also welcome additions to the menu. Since we were doing the Wine Route, the paired wines were all from the region. I especially enjoyed the barrel-fermented white wine and the cava. Meanwhile, you’re surrounded by a landscaped setting featuring a variety of herbs (just lovely in spring) set against a white, yellow and blue building that’s continually updated. Our room, 249, was wonderfully silent. Alvaro, Mauro, Ismael, Alberto, Filipe and the rest of the staff left us wanting to return. It’s the best in town.
